Disaccharide formed from glucose and galactose. Commonly found in milk.

Lactase is the digestive enzyme needed to break lactose into its monosaccharide constituents for absorption. Levels decrease with age, so that the majority of the adult population is relatively lactase-deficient. Excess consumption can cause lactose intolerance, where undigested lactose is metabolised by gut flora. These metabolites have an osmotic effect and can cause abdominal discomfort, bloating, gas and diarrhoea. This effect is actually mimicked by lactulose, a semi-synthetic disaccharide which mediates its effect by a similar mechanism. If taken in sufficient quantities, xylitol and sorbitol can have a similar effect.
